What’s for dinner?

I made up this dish last night and my husband raved (he raves about all my dishes though and he *may* be biased…consider yourself warned).  It’s a simple, healthy, summer dish that can be made in the time it takes for you to make brown rice (about half an hour, depending on your method).

Exported from MasterCook …if you don’t know about MasterCook, you should.   :heart: :heart: :heart: it.  Fabulous for organizing things you find from the food network and allrecipes.com.  You can use your web browser to easily import recipes into the program from the web (no typing!), add pictures or videos and add your own recipes too, of course.  It even does nutritional analysis and allows you to export to text, email or mastercook format.  Cool, eh?

Diva’s Delight

Recipe By:  Cheryl Kemp
Serving Size:   4    

  Amount  Measure       Ingredient — Preparation Method
——–  ————  ——————————–
  1              small  red bell pepper — chopped
  1/2         whole  red onion — chopped
  1             clove  garlic — chopped, add more to taste
  1             medium  zucchini — sliced
  14 1/2    ounces  canned chopped tomatoes
  12            ounces  extra firm tofu

  3        tablespoons  fresh herbs — I used thyme, parsley, basil and chives
                        salt — to taste
                        pepper — to taste
  1                cup  brown rice — cooked
  1/2           cup  feta cheese 

Saute garlic, onion, red bell pepper and zucchini until lightly caramelized.  Add tomato and tofu.  Simmer until tofu is heated through.  Add herbs, salt and pepper to taste.

Serve over brown rice (cooked using your preferred method…I boiled it this time instead of using the steamer) and top with feta cheese.

Winners!

Sorry it took me so long to get this up, but I had a *brilliant* idea of posting an OPML file so you can easily add the contest participants to your Bloglines or other RRS Feed reader (since we all have basically the same idea of what makes a good knit blog and probably all strive for those qualities I thought you might enjoy visiting each other).  So 1022 clicks and 5 hours later (ok, not quite that many but A LOT and I have a headache now where is my wine?) Contest Prizes

I did take the time to assemble the yarny goodness I am giving away though…as promised a bag of Noro Kureyon (95) and 3 skeins of sock yarn.
